bobby_kelton_photoGreetings Bobby Kelton, I have a question I would have loved to ask you after your spectacular performance at Floral Lakes in Delray Beach two nights ago. It was very Spectacular!

I am an author and have always wondered why it appears there is no such thing as classical humor; why humor loses meaning and power with time and even culture. You have broken that rule! Let me tell you why.

You did something totally amazing as I perceived it. In my mind, you extracted the essence of humor (the human condition) and clothed it in the cultural experience of your audience just for that evening, even down to “The Boys Supermarket” joke about the parking lot being so much bigger than the store… for sure! This is like being able to tell jokes in every language on Earth!

Is my perception correct? Do you visualize the humor in the human state and just re-clothe it in culture and local demographics for your listening audience? It sure seemed like you were talking to just me.

I cannot see how you did what you did otherwise and I am pretty imaginative. You see, you could not go back to the Johnny Carson show even if he was still alive (I do miss him). You have transcended that level of performance in your life and even though Floral Lakes does not seem as challenging as Johnny Carson on T.V. live, your performance was far better because you are now a Classical Comedian. I have never seen one before and I am not sure there is another anywhere. Congratulations!

A Natural Approach To Health: Low Carb Chocolate

Low Carb Chocolate

Have you ever had a craving for Dark Chocolate but wanted to stay on your diet?   Here is the answer to your dream of having both.   This recipe takes about 10 minutes to make and everyone will love it!  Dr J’s Low Carb Chocolate:
Ingredients:
  1. 6 Squares of bakers chocolate – unsweetened
  2. 3/4  stick of organic butter
  3. Stevia (natural sweetener)
  4. Xylitol (natural sweetener)
  5. Vanilla Extract
Place the chocolate in a glass baking dish lining the bottom of the dish with the squares.  Put it over a very low fire to slowly melt the chocolate.  When it is 1/2 melted,  add the butter cut into small squares to melt quickly.  Stir in 1/2 teaspoon of Stevia pure white powder.   Add 4 tablespoons of Xylitol.  Finally mix in 1/4 teaspoon of vanilla.   Stir the mix and  then place it in the freezer for about 1/2 hour.    That’s all there is to it!
For fun,  you can add Almonds,  small amounts of raisins (high in carbs!),  and I like to substitute peanut butter for butter and make a peanut dark chocolate.   This will help you stay on a low carb diet and not miss the occasional chocolate fix!

Chocolate Avocado Mousse

This is one of my favorite recipes.  It is a healthier dessert that everyone loves.  I have been asked so many times for this recipe that I finally decided to publish it on my site so I don’t have to retype it.  It was originally given to me by Andrea Candee,  a master herbalist in S. Salem NY.

Chocolate Avocado Mousse

Serves 5

Can be made a couple of days ahead.

  1. 3 Medium Avocados, peeled and diced
  2. 1/2  cup of cocoa powder (or carob powder)
  3. Stevia with a little Zylitol  (some people like Agave Syrup, I think it is too high in carbs)
  4. 1 Teaspoon vanilla extract
  5. Zest of one orange  (Optional)  
  6. 1/16  teaspoon salt (optional)
  7. 1 pint of Raspberries or fresh cantaloupe cut into small cubes

In a food processor puree avocados, cocoa powder and sweetener of choice. Add vanilla extract, orange and salt.  Place in container in the refrigerator until ready to serve.  Serve in dessert  glasses and garnish with banana slices. 

Here is the fun part.  Never tell your guests what it is made of and they will never guess!  But let them try!

Who Eats The Mice? – Thanatopsis!

Some things in nature are so mind blowing, that a picture of it says a thousand words.  When I was little, I read the gristly poem Thanatopsis.

It made many children more aware of the end of life than was needed as it was forced reading in school.  Did it comfort us as some claim?  I think it was unlikely!  Yet, it did focus on the end of “physical” being in a way few have and so it was novel and creative.   This morning I also noticed such an event but I will not wax poetic, let me allow technology to do it for me.

Can you tell what it is?  If not here are some words to help.  The carcass is a small shriveled up mouse and the diners are large powerful brightly colored beetles of some kind.  They are so strong that they lift and turn the much bigger carcass as they proceed to dine on it.
